Cocktail Hour: The Mojito

Looking for a refreshing summer cocktail to help you stay cool? Look no further than the mojito. Fresh mint and lime make this drink perfect for a hot, summer day. You can even jazz it up with your favourite summer fruits- try blackberries or peaches!

Key Ingredients

  • Rum- I recommend using a white rum for this recipe

  • Mint - Fresh mint leaves are what makes this cocktail so refreshing.

  • Rich Demerara Syrup- This is a richer syrup as demerara sugar has a more molasses flavour profile. To make: 1 cup water and 1 cup demerara sugar in a pan heated, but not boiled, until sugar dissolves. (you can also use simple syrup if you don’t have demerara on hand)

  • Club Soda - Any club soda will do, I usually just make my own in my soda stream, but I’m a big fan of Topo Chico.

  • Lime -Fresh lime juice can’t be beat and also use as a garnish.

Easy Instructions

  1. Muddle mint leaves and rich demerara syrup in a glass

  2. Add rum and lime juice, then fill halfway with ice

  3. Stir well.

  4. Top with club soda and more ice

  5. Garnish with lime and mint leaves and enjoy!
