{dine} Avocado Kale Salad

After posting this salad on instagram (and here) last night- I had a few requests for the recipe, so without further delay, I bring you the Avocado Kale Salad:

I stumbled across this salad on the blog Could I have that? by Sam Hutchinson. She posted the recipe here, and I’ve been making and adapting the recipe ever since. It’s my go to salad. I’ve even made it for a few dinner parties to RAVE reviews. The nice thing about this salad is it keeps well as leftovers. I often bring for lunch the next day and it’s just as good.

What you need:

1 bunch of Kale (I like the curly kind, but you can also use lacinto kale and last night I used red kale)

1 ripe avocado

1 lemon

salt/pepper

Handful of nuts (pine nuts, walnuts, pecans- whatever you prefer)

1 apple cored and cut (you could also use pear or grapes)

Optional: Parmesan Cheese, Nutritional Yeast, Feta Cheese, Goat Cheese, you get the idea

Putting it together:

Wash the kale and then tear the leaves away from the spine and put in a large bowl- you won’t need the spine so save for juicing/smoothies or do like I do and give them to your garbage disposal dog!

Cut the avocado and scoop out into the bowl with the kale. Now comes the messy part- with your hands, massage the avocado into the kale real good. 

Next, juice one lemon over the kale and mix together.

Season with salt and pepper to taste. 

Just before serving, I toss in the apple, nuts and if I choose, cheese (last night was shaved parmesan). If you don’t do dairy, try nutritional yeast. It lends a cheesy flavor that I really like.
