Quick and Easy Broccoli Salad Recipe

This broccoli salad with a tangy honey mustard dressing is a quick and easy recipe you’re going to want to add into regular rotation.

I’m a big fan of recipes I can make on Monday and use the whole week. The broccoli salad is an old favorite of mine that I’ve put back into my meal rotation. I had actually forgotten about this recipe until I was perusing my cookbooks the other day (anyone else like to read their cookbooks like books? no? just me?). This recipe is from Sprouted Kitchen and I’m a big fan of her cookbooks (I have both). I added a few ingredients, but really this recipe is so adaptable you can do a lot with it.

Key Ingredients

  • Broccoli - I use both the florets and the stems. I blanch the florets quickly to take the bite off them and then julienne the stems.

  • Parsley - Fresh parsley really adds brightness to this recipe - don’t skip it

  • Sunflower Seeds - Roasted and salted, these give it good texture

  • Apple - For crunch and sweetness. I like to use a sweeter apple like Honeycrisp, but use your favorite.

  • Optional Ingredients: Red onion (Diced small) and Cheese. I like to cube a mild cheese, but you can use any kind.

The Dressing

This tangy honey mustard dressing is what makes the salad so delicious. Here’s what you need:

  • Honey

  • Dijon Mustard

  • Olive Oil

  • Red Wine Vinegar

  • Salt and Pepper

Easy Instructions

  1. Make the dressing. Combine the honey, dijon mustard, olive oil and red wine vinegar in a small bowl and whisk until combined. Season with salt and pepper.

  2. Chop and blanch the broccoli. Chop the broccoli into bite size florets, setting aside the stems to be juilenned. I steam the broccoli in bowl in the microwave with some water, but you can also do this on your cookstop with a boiling pan of water. I’m lazy and like the 2 min in the microwave. Perfect every time.

  3. Dice the apple, onion (if using), and cheese (if using).

  4. Combine the broccoli, sunflower seeds, apple, onion, cheese, and parsley in a bowl and toss.

  5. Pour dressing over the mixture and toss well. Enjoy or put it in the fridge to cool more.

Storage

This broccoli salad is the perfect meal prep food. You can store it in an airtight container for a 2-3 in the fridge. I love this salad because it keeps its crunch even after 2 days.
